One Local Birthday

It was a little hectic around here this weekend, so I just don't have the pictures to prove my all local mac n cheese. It was made for the littlest eco 'burban boy's birthday. He was soooo hungry that when it came time to eat, we just gave him his plate and let him go at it!

The mac 'n cheese was made like this:

Vita Spelt Organic Elbow Noodles - Okemos, MI
Butter - Calder's Dairy - Lincoln Park, MI
Flour - Westwind Milling - Linden, MI
Milk - Calder's Dairy - Lincoln Park, MI
Fresh Mozzarella Cheese - Clinton Township, MI
Cheddar, Monterrey Jack - Warren, MI
Gouda - Grassfields Organics, Coopersville, MI

The eco 'burban dad enjoyed a side dish of local organic asparagus steamed with Calder's butter and some sea salt and cracked black pepper. Shocking, I know, but I just don't like asparagus. More for him, right?

All that talk about mac-n-cheese and I was thinking about it myself. So I made some for my hubby. Last night I was making his plate and (of course now I'm doing the No Graze Days), I talked to myself (literally out loud) the whole way through - I'm just going to put this macaroni on the plate and I'm not going to take a single nibble, because I have my own plate and I don't need a single nibble...

Thank goodness I was the only one in the room (I have a rep for being nuts as it is). But it worked!

We made ours with gouda, mozzarella, and parmesan (I had leftover mozzarella and parmesan from making a dinner for a friend - not local, unfortunately, but it was in the fridge - had to use it, right?

I always say, if you already bought it and it is residing in the fridge, it's local now! Food waste is worse than non-local or non-organic. Especially with cheese... Cheese is like gold in my book!

Their gouda is yummy and we also like the cheddar. Though, I haven't tried the Edam.
