One Local Summer - I'm a CopyCat!

They say that imitation is the highest form of flattery, right? If so, then Green Bean and Melinda from Elements in Time are both very flattered as I totally swiped their One Local Summer meal. Though, I added the local cinnamon mocha coffee to my breakfast. I just can't make it through a morning without coffee! And, I doubled the batch. Ya'll know I have many mouths to feed. Here's what cooking for a crew looks like:
My meal this week - Yogurt pancakes with fresh strawberries, butter and maple syrup and fair trade cinnamon mocha coffee.
Flour - Westwind Mill
Eggs - East River Organics
Butter - Calders Dairy
Yogurt - Calders Dairy
Milk - Calders Dairy
Strawberries - from a local Upick, courtesy of my boys!
Maple Syrup - Currey Farms
Coffee - Higher Grounds
Chocolate Milk - Calders Dairy
Cream - Calders Dairy
Cinnamon - Probably NOT local, but spices are excluded, right?!?

LOL, I just finished a brekkie of homemade pancakes with coffee. Don't tell Melinda, but my recipe is just a little tastier and fluffier than hers. And you're coffee isn't ready yet - you need to add a whole lot more white stuff to make it palatable. ;-)

Yes, these are SO good that I made them AGAIN this morning. And, now I have a freezer stocked with about 40 extra cakes for the boys this week. That oughta last about, oh, 2 days! :o)

Chile - hmmm, I notice you didn't SHARE your super-secret pancake recipe. And, yes, I know my coffee is full of milk, chocolate and sugar. How else would it qualify as dessert?!? ;o)

Yeah, I go back and forth on whether to share some of my best recipes. They are ones that I worked really hard to develop. If I ever do write a vegan cookbook, I need to have a few surprises left to include in it so you'll buy it, right? ;-)

Wow! Well, I'm flattered! You, Beany, and Green Bean! Great idea to freeze them. I've been making them probably every other morning lately.... why I said addicted, I truly meant it...

Chile, I'm listening, and I don't like what I'm hearing... Hmmmm... Are they as good for you? Cuz these don't even have oil in them! ; ) Ok, how about a pancake face off? I'm game if you are!

Well, I do think mine are healthier, Melinda. They use whole wheat flour instead of all-purpose, so there's whole grain goodness going on. (And, of course, I'm using manually ground flour from locally grown wheat from a small sustainable farm!) And, my pancakes are vegan which I, personally, think is a healthier choice. Since I don't cook with oil, they are fat-free, too. And, they can be whipped up and cooking in no time at all. None of this silly sitting around until it bubbles stuff.

And I'm still not sharing the recipe. Neener neener neener. ;-P

A helpful tip if you freeze your flapjacks - save the lining from cereal boxes and cut it so you have one long sheet. It's just like wax paper and you can use it to separate your pancakes so that they don't stick together when they freeze. It makes it super easy to retrieve them.

Melinda - Glad you were flattered, not insulted! Darn, these pancakes ARE GOOD! I froze about 20 of them, but am afraid my kids will eat them all up this morning!

Chile - OK, so you were THAT kid at preschool who wouldn't share toys, weren't ya? ;o)

Heater - I LOVE that idea with the cereal box liners, I am doing this from now on! The pancakes do stick, but my boys just grab the 3 or 4 that are stuck together and count them as one!! :o)

Ah, Chile, the 'sitting around until it bubbles stuff', as you say, is a way to add a more deep, complex flavor... something only serious cooks would understand... And serious cooks share their recipes, as they know they have nothing really to lose. Book smook, all your friends would buy your recipe book anyway. That is, if you have any friends, since you seem to be so mean on the playground!!

EBM, of course I was flattered! I had them again this morning. ; )

Actually, gals, I was the goody-two-shoes kid in school and usually the Teacher's Pet as well. I've only become mean and obnoxious as I've gotten older. Tell you what, Melinda, you come on by for breakfast one of these days, and we'll have a pancake cook-off. :)

Watch out, Chile! You're starting to encroach on my traditional role, which is to be Melinda's annoying, goody-two-shoes, Teacher's Pet, nuh-uh-not-gonna-share little sister.

Oh, oh, and I wanna come to the cook-off! I haven't tried my big sister's pancakes yet... ;-)

Chile, LOL. Not in your life am I going down there right now, not even to see you. How hot did you say it was???!! But... when you are ready to search for a peak-oil-ready location, please stop through here and we will definitely have a cook-off. My sis will come, I'm sure. Looking forward to it!

Melinda / Chile - if you guys want to have a pancake cook off, I keep offering up my 4 boys to come to Chile's for a cooking lessons - They could be your judges. They could throw down on a pancake eating challenge!! Though, I'm pretty sure they don't have the most discerning palettes around... Food, especially food with fruit and syrup disappears quickly. Before it's chewed throughly I think.

Oh, and Chile? I just don't buy the goody-two-shoes routine. I need proof. Like report cards from the second grade. ;o) Though, you probably baked your teachers cookies, so the grade books might have been fixed...

Sorry, the report cards went away with my Cut the Crap - Declutter challenge a while back. Ha!

Dang, we need someone with photoshop skills (you know, like Crunchy Chicken) to do us up a poster on Pancake SmackDown!

Pancake wars span the West Coast, from the yogurt version in the rainy Northwest to the vegan ones down in the scorching desert. Who will prevail? Will the children become tubs o' lard taste-testing these flapjacks? All bets are off but you better stock up on maple syrup!
