Lightning Strikes Twice - One Local Summer Week 10

So, lightning does strike twice or even three times. Oh, heck, lighting has struck here in the eco 'burban household countless times this summer. What am I talking about? The infamous yogurt pancakes of course!
I used to think I needed to make my children meals full of fancy vegetable concoctions, perfectly cooked proteins and sides of starches to qualify as a "dinner". I put myself through the wringer looking for recipes, ingredients and ideas that would be creative and also tasty to my kids and husband.

No one wanted to eat the stuff, I had to beg them to finish or at least try the new thing and by the end of the meal I was exhausted and disappointed and still had a sinkful of dishes to tackle. So, now once a week we have "Pancake Night" which is a huge hit with all of the boys, the dad and even the mom. Depending on what fruits we find seasonally at the Farmer's Market, the toppings may change and I have even canned my blueberry sauce and peaches to make sure Pancake Night can live on through the winter time and it can still be full of local ingredients.

My week 10 One Local Summer meal is a repeat of yogurt pancakes (or Pancrack depending on who you ask) topped with peaches, blueberries and maple syrup with a side of organic, ethically farmed bacon. Now, if that's not a balanced meal right there, I don't know what is! Please, try not to lick the computer screen! I know my kids sure licked their plates!!

Local Ingredients:

Flour
Yogurt
Eggs
Butter
Peaches
Blueberries (hand picked by my boys!)
Maple syrup
Bacon

Non-Local Ingredients:
Sugar

Baking Soda
Baking Powder
Sea Salt

Love it! We need to start a pancake night too. We've repeated the recipe a few times and I was going to post under the title "Oops, I did it again." ;0) But got lazy.

We used to have pancake night every Sunday when I was a kid, then settle down to watch the adventures of Laura Ingalls and Nellie Olsen on "Little House on the Prairie".

I don't think I could get my kids to watch the Ingalls family, but pancake night? I think they'd get on board with that!

Great idea and I've heard everyone raving about those darned pancakes. Will have to give them a try!

YUM! Those look great (although I had to follow 17000 links of delicious pancakey blog goodness posts to find the recipe!) and I am all over breakfast for dinner. I think it should be a regular night at my house from now on.

Debbie - Yes, as always DELICIOUS! Clean plates all around!

GB - For some reason, even when we eat something every week, once I call it a "Night" the kids get all excited. Oooooh, Taco Night, YAY. Pancake Night. Whatever works, as long as they are eating and NOT complaining!

Burbs - Oh, I loved watching the Ingalls. It was my favorite show, but not my sister's so we bickered about watching it. Sigh. She's still that way today, too. ;o) And isn't it funny how making something as simple as pancakes an "event" can create such memories? One word of warning, try the pancakes once and you will be HOOKED! Drool-a-licious!

MamaBird - Breakfast for dinner takes so much better than breakfast for breakfast. I have no idea why. And, if you need the recipe and don't want to follow the links, I seriously have it committed to memory, just let me know and I will type it from memory!! Yes, it's that GOOD.

I really need to try making these sometime soon! I'm a little afraid I too will become addicted though :)
